A Great Start on Forever: June 2007
Building on "Forever" means bringing people together, and perhaps nothing binds families more than great food and celebrations. In this month's On The Wing dedicated to Father's Day, Nina Leopold Bradley, daughter of Aldo Leopold, the father of wildlife management and one of the foremost American conservationists, shares this recipe and family story from her childhood.

In the evening, before the music begins (guitar and singing before the fire), mix the sour dough batter for the morning breakfast. This amount is for about six people. For more people add more water and flour.
- 1 Tbsp yeast or one package of yeast
- Dissolve yeast in one to two cups of lukewarm water and add flour until it is the consistency of a thick batter.
Cover and keep warm during the night. In the morning, add:
- 1-3 eggs
- 1-3 Tbsp of sugar or honey
- ½ tsp. salt
- 1 tsp. soda
Stir well and pour individual servings into a hot frying pan or Dutch oven. Roll around to produce a think pancake the size of the pan. As the batter begins to bubble and the under surface becomes brown, turn and cook until the second side is brown. Serve on a hot plate. Apply butter and syrup and roll the pancake into a kind of "jelly-roll." Enjoy!
Any remaining dough is kept and covered. The next evening repeat the process, adding flour and water for the amount needed for the next morning.
